The processing of the grapes takes place in a special room with contemporary fermentation vessels with all the equipment for stirring and cooling of the lees.

After a long maceration (3 to 6 weeks) all the wines are taken to an arched stone cellar where they age in wooden and stainless steel tanks. To ensure the ageing at constant temperatures the cellar was built entirely under the ground.

Upgrading the tradition with contemporary knowledge and technology, which brings out the best in grapes, is the motto of our work.
